Apple, Pumpkin Einkorn Muffins Recipe using Living Natural Yacon Syrup (review)

If you have been following my blogs you know I love using yacon syrup instead of sugar in my recipes, in my warm beverages, in oatmeal etc. I love the taste of yacon & think it pairs really well with pumpkin & also with einkorn flour. So muffinstoday I am reviewing Living Natural Yacon Syrup & sharing with you one of my favorite recipes. But if you should win, get creative & try it in your favorite recipes, use it in Bulletproof coffee, or just take a spoon full.
Apple, Pumpkin Einkorn Muffins Recipe
Ingrediants:
  • 2 cups einkorn flour
  • 3/4 tsp baking soda
  • 1& 1/2 tsp ground cinnamon
  • 1/2 tsp salt
  • 1/2 cup solid coconut oil (or slightly softened butter)
  • 1/2 cup yacon syrup
  • 1 cup applesauce
  • 1/4 cup mashed cooked pumpkin (or canned)muffins 2
  • 1 egg
  • 1 tsp vanilla extract
  • 1/2 cup chopped nuts
  • 1/4 cup diced apples
Directions:
  1. Preheat oven to 350f grease 12 muffin tines or use liners
  2. In a small mixing bowl mix together dry ingredients together the flour, salt, baking soda & cinnamon
  3. In a larger mixing bowl mix the the wet ingredients coconut oil, yacon, applesauce, pumpkin, egg, vanilla extract using a hand or stand mixer, mix 3 to 4 minutes
  4. Slowly add the dry ingredients to the wet 1/2 cup at a time, mixing gently so at to not over mix.
  5. Next gently fold in nuts & & apples (do not over mix)
  6. Divide in muffin cups, bake at 350f for 20-25 minutes or until a toothpick or knife inserted in muffin comes out clean. Enjoy!

Yacon Syrup is an all natural sweetener product.  I tried this product and personally loved it.  It is designed as a weight loss product. It is suggested to use it 3 times a day to help reduce appetite and aid weight loss.  I used the product in my tea as a sweetener.  It worked great.  The product adds some sweet flavor to your drink and since it is all natural you don’t have the negative health consequences of using sugar.  I thought the flavor was great as well.  Very simple to use and works great. I did notice that I had more energy after using the product.  The appetite suppressant was noticeable as well.  I would note that by itself it will not result in weight loss, good eating habits & exercise will need to be used as well. It can help to reduce hunger though which can make healthy food choices easier to make!

Since Living Natural's Yacon Syrup is not the first that I have tried, I was able to compare flavor and texture. It is a great-tasting Yacon syrup though, which is good because I know that taste varies among different brands and producers. This one has a really rich texture and flavor that I enjoy. One of the other brand of Yacon syrups (which I also liked) was the texture of table syrup and had a very mild flavor. This one has a different look (slightly lighter in color and sort of grainy-looking, even though it doesn't feel grainy) and the molasses-like flavor was more distinctive. I like using this one when I want to add a richer flavor to my beverages (okay, coffee). I like it best in hot coffee than any other drink although I have used it in hot and cold teas.

What I wonder, now that I have tried 3 different brands of Yacon syrup, is whether - brand to brand - they all have a difference in taste and texture. In general, like Yacon syrup for the benefits of using it instead of other sweeteners, but taste is important too. With theLiving Natural brand Yacon syrup I have not been disappointed.

I had my sister try this one in her coffee and she actually liked it (even though she is a Splenda user). One of the reasons I think she did like this one more than the first syrup she tried with me (and that I really liked a lot) is because of the stronger flavoring.

There's a reason I want to get my friends and family to try Yacon syrup. Some of the benefits that I have heard of are:
  • Yacon root is a natural source of sweetener
  • In most cases, fewer in calories and more nutritious
  • Yacon syrup contains Fructooligosaccharide (or FOS)
  • There are indications that Yacon reduces blood glucose levels & weight loss
  • Has a good flavor & lacks the unpleasant after-taste of artificial sweeteners
When my sister first tried Yacon syrup, she commented that she "could get used to it". And getting used to anything new is the main thing. If, like my sister, you have used artificial products -or table sugar, honey, and/or other sweeteners - you will need to get used to Yacon syrup. 

A third brand of syrup I tried was not as much to my liking. It had too strong of a flavor (almost with a wine-like aftertaste) that some people might not mind. This Living Natural syrup is probably my favorite. Unlike some of the other sugar alternatives I've used, Yacon syrup has been easy to get used to though. I did have to learn how much to use and when to use it. For instance, I had been trying Yacon syrup for a while before I started using it regularly on my hot cereals. My sugar use is mainly in coffee, so that's where I started out. 

Now that I am used to the taste and coloring of the Yacon syrup, I wish there were more products made using it as the primary sweetener.

Good afternoon, savvy savers! Today finds us with another new, and interesting product review, this time the Living Naturals Yacon Syrup Sugar Syrup Review! As many of my readers know, I am always on the lookout for new, exciting products to review for this blog, and this product is no exception. I have seen similar syrups throughout many local health food stores, in my area, and was excited to try this variation.
To begin, I have taken this syrup for the past three weeks, and was given the opportunity to try the syrup by way of the manufacturer. Moreover, like many of you, I’ve read numerous reports about yacon root syrup, so I was excited to try this formulation. I have also researched this product, and was able to gather that this type of syrup, made from the yacon plant, was used by the Incas for its nutritional properties, and for the past century in Bolivia, yacón root has been eaten by people with diabetes and renal disorders, because of the syrups ability to help regulate insulin levels. I am an in the stands beer vendor with acid reflux. Last weekend I realized Powerade hurts my stomach something awful. I also cannot drink any dark sodas because of the affect they have on me. I take Protonix and it does pretty good work for me. . I started taking the Probiotics supplement and my stomach feels much better today. I've been working really hard on getting fit and being healthy and although I've had a few mishaps along the way, I'm still going at it strong. It didn't occur to me until recently though that maybe I shouldn't only be eating healthier but also supplementing my diet with things that are known to be good for you, and that's why I decided to try out this Yacon Syrup, because I've heard a whole lot of good things. First I'll start by telling you what exactly it is. 

Yacon Syrup, is raw and all natural syrup that comes from the roots of naturally grown Yacon plants in Peru. It is low in calorie, and low glycemic sweeter has been shown to boost metabolisms, lower blood pressure as well as increase fiber and antioxidants. Looking at the packaging, I have to admit I like it I feel like this is something I can just store away in my pantry (it doesn't need refrigerated) and add to my cake and pancake mixes for a little extra boost. 

Not only can it be added to mixes but you can take it by itself, a serving size of a teaspoon three times a day, before meals. I expected it to taste awful, but honestly it isn't bad, not bad at all. I didn't have any trouble eating it straight.

Overall I really like the Yacon Syrup, and can see myself using it as a dietary supplement to keep me from eating so many snacks throughout the day. It tastes good, and seems to work well, even if it is a little pricey.

I was disappointed that when I received this package that the seal was broken. It was not fully broken or removed so I did not worry about using it.

I have been using this product in my coffee and tea recently and I love it! It is a great alternative to artificial sweeteners and there's no icky aftertaste.
